THE MAKING OF
A CLASSIC

Just as Malcolm III was a proud King of Scotland, Canmore whiskies are a proud legacy of the land and centuries of Scottish craftsmanship. Canmore is made from the finest malted barley, distilled and aged to perfection in ex-bourbon barrels under the watchful eye of the Master Distiller.
STEP 1

MALTING

It all starts with the barley. The grain is steeped in water for two
days and left on the malting room floor to germinate. As the
starch slowly converts into sugar the first layer of flavour start to
develop.

MASHING

The malted barley is ground down to a coarse flour called grist
and mixed with water. After several hours of stirring to extract
the sugar from the barley, we are left with a beautifully sweet liquid
(the “wort”).

FERMENTATION

Yeast is added to the cooled wort mixture and the mixture is left
for two days where the yeast works hard to convert the wort to
an alcoholic mixture with its distinct flavour.

DISTILLATION

In the perfectly designed copper pot stills, the liquid undergoes
distillation to create the highest quality spirit. After two rounds
of distillation, we are left with the desired “heart” of the liquid.

spirit,” ready to absorb even more flavour.

MATURATION

This is where time and wood impart their magic. Our new make
spirit is left to age in our first fill select ex-bourbon barrels.
The white oak imparts a unique flavour. After several years of
patiently waiting, we are left with bold complex whiskies that are
truly distinctive of a Highland malt.
